Big, Mad, Props to Seventh Sister!
She lists the steps of making it, starting with day one
And
proceeds
all the way
through
All the way to realizing that the four day process I described was really five days.
She also said the time invested was worth it.

terrific.
As the first person to taste the finished product, I gotta say it ROCKS! The texture isn't soft and mushy like some I have had (the store-bought variety), but instead has just enough snap to be al dente. The taste is phenominal... the heat of the ginger is not immediate, but sneaks up on you as it is chewed and swallowed. We will no doubt make short work of this stuff.
glad to hear that. when i saw the photos 7thsister posted at her site i knew she had nailed it. after several dozens of batches i pretty much can tell by sight and smell where the finished product is.
it looked perfect. nice to know i still got my eyeball chops.
